A vibrant green/yellow hue with a fine bead of bubbles lends towards a great “first impression” for this Cap Classique wine. The nose is fresh with green apple and acacia blossom well backed up by soft hints of minerality and aromas of freshly baked brioche. A fine mousse which imparts a gentle explosion of bubbles on the palate paired with excellent structure leads to a long finish.

Freshly shucked Namibian oysters, salmon tartar with a zesty lime salsa, Beluga caviar and blini.
Minimum time of 24 months on the lees after which it was manually riddled and de-gorged.
